Vegan Superfood Burgers
Ingredients Makes 6 – 8 patties
- 2 cups cooked mashed sweet potato
- 1 cup cooked brown rice
- 4 kale leaves
- ½ cup quinoa flakes
- ½ cup hemp seeds
- 2 tablespoons chia seeds soaked in 2/3 cup water (soaked for 15min)
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon apple cider vinegar
- 1 tablespoon tamari soy sauce
- ¼ cup chopped coriander and parsley ( any mixed herbs will do )
Method
- Mix all ingredients and make in to patties
- Heat fry pan with coconut oil and cook patties till golden brown
- Serve on your favourite bread roll with mixed salad leaves and pesto
Alternatively have a bun free burger and enjoy your patties with salad and favourite sauce.

Antioxidant Brownie Recipe by Leanda
Ingredients
- 1 cup cooked mashed sweet potato
- 3 Tablespoons almond butter
- 2 tablesoon maple syrup or rice malt syrup
- ¼ cup organic cocoa powder
- ½ cup goji berries
- ¼ cup cacoa nibs
Method
- Preheat the oven to 200 and grease a small cake pan
- Melt almond butter with syrup
- In a large bowl add the sweet potato, melted nut butter, syrup, cocoa powder and mix well
- Fold in Goji berries and cacao nibs
- Pour mixture into greased pan and bake for 20 minutes or until cooked through
- Remove from the oven and allow to cool completely before slicing
Store in fridge or freezer
